You can enjoy the flavors of Puerto Rican pernil pork in a version that is lighter and cooked slowly. The pork in this recipe is flavored with garlic, oregano, cumin, and lime juice. The meat is tender and full of flavor, and it goes well with rice and beans or in tacos.
Ingredients: 4 lb pork shoulder, trimmed of fat. 8 cloves garlic, cut into slivers. 1 tbsp dried oregano. 1 tbsp ground cumin. 1 tbsp kosher salt. 1 tsp black pepper. cup fresh lime juice. 1 cup reduced sodium chicken broth.
Instructions: Use a knife to make small cuts all over the pork, and then put garlic slivers into the cuts. Put oregano, cumin, salt, and pepper in a small bowl and mix them together. Spread the mix all over the pork. It's time to cook the pork. Put chicken broth and lime juice on top of the pork. Cover and set the heat to low. Cook for 8 to 10 hours, or until the pork is soft and can be easily shred with a fork. Take the pork out of the slow cooker and use two forks to shred it. Warm up and serve.
