Instructions: Take the Lucky Charms ice cream out of the freezer so it can get a little softer. To make thin rectangles, cut each marshmallow square in half across the middle. Put some softened ice cream on one side of each marshmallow rectangle, and then put another marshmallow rectangle in the middle to make a sandwich. Crush the cereal a bit with a rolling pin after putting it in a zip-top bag. In a double boiler or microwave, melt the coconut oil and white chocolate chips together until smooth. First, dip the edges of each ice cream sandwich into the melted white chocolate. Then, cover the edges with the crushed cereal. Put the ice cream sandwiches on a baking sheet lined with parchment paper and freeze for about an hour, or until they are firm.
