Red lentils and a mix of spices are used to make Tadka Dal, an easy and tasty Indian lentil soup. It's a hearty dish that's great for a weeknight dinner.
Ingredients: 1 cup split red lentils masoor dal, rinsed. 4 cups water. 1 medium tomato, chopped. 1 teaspoon turmeric powder. Salt, to taste. 1 tablespoon vegetable oil. 1 teaspoon cumin seeds. 1 teaspoon mustard seeds. 1 small onion, finely chopped. 2-3 cloves garlic, minced. 1-inch piece of ginger, grated. 2 green chilies, chopped. 1/2 teaspoon red chili powder. 1 teaspoon garam masala. Fresh cilantro, chopped, for garnish.
Instructions: Put the lentils, water, tomato, turmeric, and salt in a large pot. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the lentils are soft. Set the oil in a small pan over medium heat. Put in the mustard and cumin seeds. Cook until they begin to pop. Put the green chilies, onion, garlic, and ginger in the pan. It will take about 5 to 7 minutes of stirring often cooking until the onions are soft and clear. Add the garam masala and red chili powder and mix well. Keep cooking for one more minute. Add the tempering mix to the cooked lentils and mix them well. Add another 5 to 10 minutes of cooking time to let the flavors mix. Add fresh cilantro as a garnish before serving. Warm it up and serve it with bread or rice.
