Waited 1.5 hours for this, but definitely worth. Taishoken originates from Japan, and the San Mateo location is the first US location open! My friend and I both ordered the Ajitama Spicy, which is the spicy tonkotsu broth ramen with a soft-boiled egg. The soup wasn’t so spicy that it would obscure the rich flavor, but spicy enough to give a nice kick, and the noodle texture was also chewy and delicious. I was actually a bit surprised at the flavor of the broth- a lot of ramen places I’ve been to have more or less similar tonkotsu broth flavor, and the more authentic restaurants have a similar flavor but just much more intense and aromatic. Taishoken’s broth flavor was actually something a little bit more new and unfamiliar- it took a few mouthfuls to get more accustomed to it, but I enjoyed it a lot (albeit a bit heavy, so if you tend to like lighter broths, this might not be for you). One small complaint I would lodge is that the soft-boiled egg’s yolk was slightly too solid for my taste. But overall, would definitely recommend!

Tsukemen from Taishouken Higashi ikebukuro: the first shop opened by Yamagishi san, who popularized tsukemen and established it as a signature recipe of Tokyo.

He used to sit in front of the shop greeting all customers. He passed away a few years ago; the chair he used to stay is still there.
