Alioli
Makes ½ litre
4 garlic cloves
¼ tsp mustard powder
1 tsp sugar
1 egg yolk
½ egg white
pinch of salt and pepper
A small bunch of parsley
2 tsp lemon juice
3,5 dl neutral oil
0-0,5 dl cold water
Add the first bunch of ingredients and blend using an immersion blender
Very gradually add the oil
Use water to regulate the thickness if you want :)
Passion fruit variation:
4 garlic cloves
1 egg yolk
½ egg white
Juice from 1/2 lemon
1 tbs passion fruit vinegar
Herbes de provence
3,5 dl neutral oil
Tapas meat balls
I used to make tapas all the time, not sure why I stopped? I guess these things go in waves. But these little balls are a beauty to behold, and a party in your mouth.
For the brava sauce:
Bake in the oven until the peppers are soft:
4 large red peppers 4-8 cloves garlic About 0.5 dl walnuts (can be omitted)
Add in a large pot together with:
2 cans of good quality tomatoes A few leaves of basil Salt and pepper to taste
Use an immersion blender to make a smooth sauce. Can be kept in the fridge until ready to use in next step, or used separately as an accompaniment to potatoes, meat or vegetarian meat balls.
For the meat balls:
Gently put the sauce to a simmer Knead or run in a mixer fitted with mixing stand (not whip): 1 kg minced meat of your choice Roll into small sturdy balls, and gently place in the simmering sauce as you go. Put a lid on the pan, and let the meatballs cook slightly before you attempt to very gently stir. Serve with potatoes and aioli, or some other tapas dishes according to taste.
