The jerk seasoning and the charred sweetness of the peppers and onions on these Caribbean-style Jerk Shrimp Kabobs give them a lot of flavor. It's great for a summer barbecue or any time of the year when you want a taste of the islands.
Ingredients: 1 lb large shrimp, peeled and deveined. 1/4 cup jerk seasoning. 2 tablespoons olive oil. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. Wooden skewers, soaked in water.
Instructions: In a bowl, toss shrimp with jerk seasoning and olive oil until well coated. Thread shrimp onto soaked wooden skewers, alternating with chunks of bell pepper and onion. Preheat grill to medium-high heat. Grill kabobs for 2-3 minutes per side, or until shrimp are pink and opaque. Serve hot, garnished with lime wedges and fresh cilantro.
