Chef’s Note: this is exactly how it sounds. And really helpful if people like having their mexican-style food different ways. Also makes it really easy to get a lot of the food you like while minimizing what you don’t like.
1 packet Knorr Spanish rice
1 can (16 oz) refried beans
Toppings. Mix and match as you want, add as you like. this is just what I use
Sour cream or Mexican crema
Shredded Mexican / cheddar cheese
1. In a two quart pot, add 2 cups water and your packet of rice. Heat to boiling, then reduce heat and simmer, covered, for 12 to 15 minutes
The packet says 7 minutes. Your rice will not be tender by then
do all other steps while rice is cooking
2. Brown beef in a large skillet. Drain fat.
3. (optional) Dump beans into a small pan. Heat up for about 5 minutes. Stir occasionally.
4. Once beef is drained, add taco seasoning and 1/2 cup of water to beef. Bring water to a boil and cook until water is cooked off, stirring occasionally
5. Once everything is all cooked, now we serve.
How I serve: add Doritos to your plate. Then, add your beef, rice, and beans (on top or on the side). Top everything with sour cream and cheese, and add diced tomatoes to everything.
