Ingredients
Yield: 16 servings
2 tablespoons vegetable or canola oil, plus more for the pan
⅔ cup/170 grams tahini, well-stirred
1 large egg
1 large egg yolk
¾ cup/177 milliliters whole milk
¾ cup/150 grams plus 2 tablespoons sugar
1 tablespoon vanilla extract
1½ cups/192 grams all-purpose flour
2 teaspoons baking powder
1 teaspoon kosher salt (such as Diamond Crystal)
1 cup/115 grams coarsely chopped semisweet chocolate (not darker; bitterness will clash with the sesame(
¼ cup/30 grams plus 1 tablespoon sesame seeds, toasted (see Tip)
Preparation
Heat the oven to 350. Oil a 9-inch square baking pan and line it with parchment, leaving a 2-inch overhang on two sides.
In a large bowl, whisk together the oil and tahini. Add the egg, egg yolk and milk and whisk until completely smooth. Whisk in ¾ cup sugar and the vanilla.
Add the flour, baking powder and salt and fold in with a rubber spatula. Reserve about 2 tablespoons of the chocolate and add the remainder to the batter. Fold in 1 tablespoon sesame seeds.
Transfer the batter to the prepared pan. Sprinkle the reserved chocolate, the remaining ¼ cup sesame seeds and remaining 2 tablespoons sugar evenly over the top. Bake until the cake is puffed and set and a toothpick inserted into the center comes out almost clean with a few moist crumbs attached, 25 to 30 minutes. Let cool 10 minutes in the pan, then lift the cake out of the pan using the parchment overhang and transfer to a wire rack to cool completely.
To serve, cut the cooled cake into 16 pieces. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Thaw uncovered at room temperature before serving.
Tip
Toast sesame seeds in a light-colored pan on medium-high, tossing frequently, until golden brown, 8 to 10 minutes.

Pineapple Fritters
I fancy going to a funfair. It's been a few years since I last strolled through stands, wondering if I'd rather try my hand at coconut shie or balloons and darts, or take a ride in a bumper car. In the end, I bought myself freshly fried churros and sat on a bench, eating the delectable treat whilst observing sheer elation on very young faces. Making these Pineapple Fritters reminded me of the laughter, the music, the sugary smells, and I long for an arvo at the carnival. And since I can supply my own beignets, this time I shall hop on a bumper car!
Ingredients (serves 3):
a medium, ripe sweet pineapple
2 large eggs
25 grams/1 ounce demerara sugar
130 grams/4.5 ounces plain flour
2 teaspoons baking powder
about 1/2 cup Almond Milk
a plump vanilla bean
Vegatbale oil for frying
1/3 cup Cinnamon Sugar
Peel and cut pineapple into thick slices. Remove the hard core of the pineapple slices with an apple corer. Set aside.
Break the eggs in a medium bowl, and whisk energically with the demerara sugar until pale yellow and fluffy.
Sieve in the flour and baking powder and give a good stir.
Scrape the seeds off the vanilla bean, and add to the bowl. Gradually whisk in Almond Milk, until you have a smooth batter.
Heat vegetable oil in a large, deep skillet.
Spoon Cinnamon Sugar in a shallow plate. Set aside.
Once the oil is very hot, dip a pineapple slice into the vanilla batter, coating well, and carefully drop into the simmering oil. Fry, 2 to 3 minutes, until golden brown on each side and transfer to a plate lined with paper towels.
Then, roll into Cinnamon Sugar, and place onto serving plate. Repeat with remaining pineapple slices, frying them in small batches.
Serve Pineapple Fritters warm, with chilled Champagne or Queens Park Swizzle.
Cottage Cheese Flatbread: Soft, Savory, and Gluten-Free 🍞 Ingredients: 1 cup cottage cheese (blended until smooth) 2 large eggs 1 cup almond flour (or oat flour for a different texture) 1/2 tsp baking powder 1/2 tsp garlic powder (optional) 1/2 tsp salt 1/4 tsp black pepper 1 tbsp olive oil (for brushing) 1 tbsp fresh herbs (optional – parsley, basil, or chives) Instructions: Preheat Oven: Set to 375°F (190°C) and line a baking sheet with parchment paper. Blend Wet Ingredients: In a bowl, mix or blend cottage cheese and eggs until smooth. Add Dry Ingredients: Stir in almond flour, baking powder, garlic powder, salt, and black pepper. Mix until a sticky dough forms. Shape the Flatbread: Spread the mixture onto the prepared baking sheet, forming a thin, even layer. Bake: Place in the oven for 18-22 minutes, or until golden brown and firm to the touch. Brush & Serve: Lightly brush with olive oil and sprinkle with fresh herbs. Serve warm with dips, toppings, or as a sandwich wrap!
