Cook these pork kebabs on the barbecue for an authentic taste of Cyprus. The marinated pork, combined with colorful bell peppers and red onion, delivers a burst of Mediterranean flavors with every bite.
Ingredients: 1 pound of pork loin, cut into 1-inch cubes. 1 red onion, cut into chunks. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 green bell pepper, cut into chunks. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 teaspoon dried oregano. 1 teaspoon dried thyme. Salt and pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: Cut up the garlic and put it in a large bowl. Add the olive oil, dried oregano and thyme, salt, and pepper. To make a marinade, mix it well. Add the pork cubes to the sauce and mix them around. Put it in the fridge with the lid on for at least 30 minutes to marinate. Set your grill's temperature to medium-high. On the soaked wooden skewers, alternately thread the pork cubes that have been marinated, the red onion chunks, and the bell pepper chunks. Place the kebabs on a grill that has already been heated up. Cook for 10 to 12 minutes, turning them over once in a while, until the pork is fully cooked and the vegetables are slightly charred. Before you serve the kebabs, take them off the grill and let them rest for a few minutes. Fresh salad, pita bread, and the Cyprus pork kebabs should all be served hot.
