Tea, healing and health are a natural combination. For the main course at the Camellia Epicurean at Dilmah Global Partner Conference 2016, barramundi which was steamed to keep the purity of the flavours. Hence it blended well with the rest of the components; Green tea with Jasmine Flowers is perfect to lightly enhance the flavours of the fish. This is a simple yet elegant dish featuring the fine flavours of both the tea and fish, showing how green tea and seafood are a marriage made in heaven. This #teainspired dish was prepared by Chef Peter Kuruvita specially for the dinner - Camellia Epicurean.
The panel of judges for the Dilmah Real High Tea Global Challenge 2015 commended team Cafe Turri from Chile on their passion and commitment in presenting such an innovative and culturally diverse real high tea. “You just took this competition to a whole new level. The innovative tea gastronomy and the sensational tea and food pairings like the tea liquor-glazed ham you created really transported your high tea to a completely different stratosphere. Not only did we enjoy a century’s worth of culture on this table, we were also introduced to an amazing but subtle marriage between the flavours of Chile and Sri Lanka. You also successfully showed us that a region embedded in the ways of coffee can indeed revolutionize the art of tea,” they told Cristian Gomez and Catalina Venegas.
