Serves: 4 Ingredients: 1 pack of prepared Hollandaise sauce, or make your own! 1½ tsp of TABASCO® Sauce 8 rashers of bacon 2 tsp white vinegar 8 large eggs from The Happy Egg Co 4 English muffins 2 tbsp butter Method: 1 Prepare Hollandaise sauce according to package directions, or method if making, adding TABASCO® Sauce when you add the water or milk (depending on directions). Keep warm. 2 Cook bacon until lightly browned, about 1 minute per side. Set aside. 3 Fill a pan with water; add the vinegar and bring to a boil; reduce heat to low. Break the eggs, one at a time, into the pan. Cook for 3 minutes. Remove eggs with a slotted spoon. 4 Split and toast the English muffins. Once toasted, butter lightly. 5 To assemble, place two English muffin halves on a plate, top each half with a slice of bacon and a poached egg.
