Here's something I think a few of us may enjoy making: a temperature quilt. Click to the linked page for a good explanation on what these are. I intend to make one next year, using a sampler quilt pattern, and making one block everyday. I just need to collect the fabrics and choose the sampler.

I've been considering making a temperature quilt. We get down into the 20s F and over 120 F, which is quite the range. Small foundation paper piecing blocks, like a sampler quilt, might work well for something like this. It's a year-long project, one block a day, so I'm still not quite up for it. It requires a fair range of fabric, and I don't have thr necessary material so this something I'll likely do next year, with batiks.
