This Basil Chicken in Coconut Curry Sauce cooked in a slow cooker is a tasty and flavorful keto-friendly dish that's great for busy weeknights. When you put together tender chicken thighs, fragrant spices, creamy coconut milk, and fresh basil, you get a delicious meal.
Ingredients: 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces. 1 onion, chopped. 4 cloves garlic, minced. 1 red bell pepper, sliced. 1 can 14 oz coconut milk. 1/4 cup chicken broth. 2 tablespoons red curry paste. 2 tablespoons fish sauce. 1 tablespoon grated fresh ginger. 1 tablespoon coconut aminos. 1 tablespoon erythritol or low-carb sweetener. 1 cup fresh basil leaves, chopped. Salt and pepper to taste.
Instructions: Put the chicken, onion, garlic, and bell pepper in a slow cooker. Mix coconut milk, chicken broth, red curry paste, fish sauce, ginger, coconut aminos, and erythritol in a different bowl using a whisk. Add the sauce to the slow cooker with the vegetables and chicken. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours, until the chicken is soft and fully cooked.
