Ingredients: 2 cups diced sweet potatoes. 2 cups diced pumpkin. 1 onion, finely chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. Salt and pepper to taste. 2 tbsp olive oil. 1/2 cup coconut milk. Chopped fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, saut until translucent. Add diced sweet potatoes and pumpkin, cook for 5 minutes. Pour in vegetable broth, season with cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until vegetables are tender. Using an immersion blender, puree the soup until smooth. Stir in coconut milk and heat through. Adjust seasoning if needed. Serve hot, garnished with chopped fresh parsley.
