A flavorful Tex-Mex inspired casserole cooked in a slow cooker, featuring tender chicken, hearty beans, sweet corn, and zesty tomatoes, seasoned with spices and topped with melted cheese.
Ingredients: 1 lb boneless, skinless chicken breasts, cubed. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 1 can 10 oz diced tomatoes with green chilies, undrained. 1 cup salsa. 1 cup shredded cheddar cheese. 1 teaspoon chili powder. 1 teaspoon cumin. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. Cooked rice, for serving optional.
Instructions: In a slow cooker, combine chicken, black beans, corn, diced tomatoes, salsa, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to mix well. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender. Sprinkle shredded cheddar cheese over the top during the last 30 minutes of cooking. Serve hot over cooked rice if desired.
