Today’s Omegaverse-ification is…
The Greatest Estate Developer!
Lloyd is an omega in my mind. mostly because of his relationship with Alicia in canon but also because he just seems that way.
on that note, Alicia is an alpha and so is Javier. I’m a multishipper for both of them so they’re both alpha-omega pairs (or an alpha-alpha-omega polycule?) with Lloyd
other characters:
Arcos is an omega and Marbella is his alpha
Julian is a beta and Scheherazade is his alpha
Bayern is a beta
Emily & Kougar are an alpha-alpha pair
Greg is a beta
I would add Giyeong but I think it makes more sense for only the fantasy world to be omegaverse (if he was though I think he’d be an alpha)
[edit] worldbuilding:
given the nature of this story, I think the world in The Knight of Blood and Iron would have little to no sexist prejudice of any kind, including for secondary genders. any kind of pairing is considered normal and okay, though some are just generally more common than others. alpha-omega is the most common simply because of how biology works, but any other kind of pairing still exists and is accepted.
in the Magentano Kingdom prejudice and discrimination against anyone for gender, race, secondary gender, sexuality, etc. is illegal (this series drank its respect women juice. it wouldn’t make sense to change that in my humble opinion)

"The Stand-In Cushion"
One morning, as I was leaving Lord Lloyd behind at the estate to head to work, he held out his palm as if demanding something.
"Leave that there."
Huh? Just as I was scratching my head, wondering what on earth he meant by "that," he pulled my favorite cushion out of my bag.
"It's to take your place while you're gone."
Seeing his flushed face, I vowed to finish work early.
