Thai Lime Marmalade (Vegan)
Thai Tofu Lime Rice
Ingredients
Block of tofu
juice of 1/2 lime
2 tbsp of tamarind paste
Chili flakes
Flour
Coconut milk (200 ml)
1 clove of garlic minced
1 thumb of ginger minced
2 tbsp of fish sauce (vegans omit obvs)

For my coconut rice recipe click here. But add in three lime leaves.
Cut tofu into rectangles, coat in flour and then fry. Place of kitchen paper.
When you open the can of coconut milk don’t mix it, just scrape off a little of the hard coconut cream on top and use that to fry garlic, ginger and chili flakes. Add in fish sauce and let reduce. Add in rest of ingredients and leave to cook on medium heat until coconut milk reduces slightly.
SERVE on top of coconut rice !
