Ever since I shared my cong you zhua bing (hand grasps scallion pancake), my mom reminded me that she loves the version with Thai basil and misses it. She hasn't visited this stall in a long time, hope the owner is doing okay🙏🏼. I made it using a combination of my roti canai (roti paratha) and scallion pancake recipes. Stir fried Spicy Thai Basil Chicken with spicy cucumber salad
Thai - spicy - simple
The Thai kitchen is full of exotic flavours and spiciness. In a Thai dish you find sweet, sour, salty and spicy flavours at the same time which result in a spectacular taste. This dish represents one of the best Thai meals. Basically a street food. Easy, extremely flavourful and so yummy. I often prepare everything in advance, and stir fry it quickly before serving. It is best with simple white rice and a spicy cucumber tomato salad. A fried egg is a good addition to this dish.
Ingredients for two servings:
1 whole coarsely ground chicken breast
3 garlic cloves in slices
1 or 2 medium chillies in slices (you can take off the seeds if you want to have it less spicy)
Oil for stir frying
2-3 teaspoons fish sauce
1 teaspoon oyster sauce
2 teaspoons dark soya sauce
1 teaspoon brown sugar
1 bunch of Thai basil or sweet basil
Put the chicken in a bowl, add all the other ingredients, except the basil leaves. Mix it well. Put it in the fridge for at least 30 minutes.
Put the oil in a large skillet, heat it and quickly stir fry the chicken. If you want some more flavour, add some fish sauce or dark soya sauce. After a few minutes, when it is cooked toss in the Thai basil leaves, fry it until they wilt.
Serve it immediately with rice.
For the salad:
2 Japanese cucumbers cut in julienne
1 big tomato cut in small cubes
1 shallot in slices
1 inch ginger cut in julienne
Thai basil leaves cut in strips
2 teaspoons of apple cider vinegar
1 teaspoon of fish sauce
1 teaspoon of brown sugar
Preparation:
Put the vinegar in the salad bowl. Add the garlic, mix it well and put it aside for a couple of minutes. Add the fish sauce and the sugar, mix it well and fold in all the veggies. Mix the salad well and wait about 10 minutes before serving. Taste and add seasoning if needed.

Basil Seed Drink at VietLead's first Tết Lunar New Year Festival, called "A Taste of Home/A Story of Resilience". These drinks were made by Thao Nguyen (second from right), by first brewing Lemongrass (Cymbopogon citrates), and then dissolving rock candies in the water. You add the Basil (Ocimum basilicum) seeds, which form a fluffy jelly coat around the tasty hard seeds. Add ice and enjoy! 1月に買っておいたバジル3種の種蒔きをしたのが4月4日。 それからおよそ一ヶ月、先週やっと一つレモンバジルが発芽しました。 さらに昨日はお隣のタイバジルも発芽してた!🌱 ホーリーバジルはどうかな~? 前回(数年前)は失敗して発芽しなかったんだけど、難しいんですよねー。まだ種あるから、5月中にもう一度蒔き直ししてみるかな?
ホーリーバジルの葉は、実はアジア食材店でも買えるし、苗だって手に入らないわけでもないのですが、過去の体験では私の中には2種類の味(風味?)があって、個人的には苗で買って育てたものが好みだったんだけど、どれが本当のホーリーバジルか知りたくて。おそらく蒔いたうちのホーリーバジルかタイバジルのどちらかが私の求めているものだと思います。
