The entirety of Gideon’s fighting style relies on rage and anger, taking hits and using them as fuel for his counterattack. He’s used his axe for most of life and can swing the thing around without too much struggle. If he loses his weapon, he’s still got a lot of power within his body, but he doesn’t have much actual training. Just experience. Take away his axe and his arms (somehow), and the dude is pretty useless.

He tries, sure, but normally he doesn’t have the attention to detail or gentle care that really expert crafting requires. He knows enough to get by, but he’ll never have the ability to take it up as a job once he retires from treasure hunting.

A similar situation to the Hand and Magic. Gideon can smack a rock really good, sure, but there’s a lot more to it than smacking rocks. The man finds most of his gold on adventures, what’s the point of mining for it? With botany/fishing, again, he’s just too clumsy and rough to have any skill. Tries to pluck a flower and crushes it in his hand. Womp womp.
