I personally wouldn’t classify some alternatives mentioned on this post as “healthy” but these wonderful ideas are definitely somewhere to start from. I’m not a huge fan of storing/freezing food over periods of time, yet “bake everything in a muffin tin” idea is great even for rush & go mornings (and you can perfectly prepare everything fresh in the morning). Some of my favourites:
Mini frittatas: Grated/finely chopped veggies (carrot, zuccini, sweet potato, pumpkin) mixed with eggs, a dash of milk and cheese, then baked in a greased muffin tin
Oats, polenta porridge and ‘pink porridge’ - Gee! Who doesn’t love berries and honey on porridge?
Smoothies: Milk, banana, yoghurt, honey and cocoa - definitely something to try!
