GREAT QUESTION!!!!!!
the tortilla soup from the taco place in my college's hometown. goes actually insane levels of crazy stupid i miss having more regular reasons to be in town in the winter/fall so that i can enjoy one of the best bowls of soup ever put together. sopa de tortilla broadly is great of course but the number one ranking has to go to that one specifically. i should really work on learning to make it at home lol
BEEF PHO BOTTOM TEXT though i suppose i could pick a specific place and say it's from the pho place 7 minutes away from me and jenny's apartment that we reliably have turned to in times of emotional turmoil, sickness, and 'too fucking cold and miserable out to do anything' weather. the craziest broth in the whole worldddddd
deb smitten kitchen short rib onion soup i could have said french onion soup more generally and almost did because it is delicious but THIS? this is crazy. this is one of the top five craziest things i have ever made. followers if you ever wake up to a text from your future mother in law on december 24th being like "hey do you guys have ideas about what we should make for christmas dinner?" i would highly recommend doing what jenny and i did and making this soup. so long as you have like four hours to spare (not all active cooking LOL)
this is recency bias but i cannottttt stop thinking about justine 'snacks' doiron's kabocha squash and fennel soup, it is exactly the sort of multistep labor of love that i love to commit myself to fully on a lovely weekend afternoon but don't actually register as work.
deb smitten kitchen's corn coconut soup although im an anti immersion blender warrior and like the soup better when it's just brothy based :) that said the corn stock here is the only kind of stock i have ever made from scratch and its sooo easy and rewarding. also i fucking LOVE both fried and pickled shallots and the opportunity to use both here is so delightful
i could list a million runners up but it would take forever. yay soup!
