Thirteen Bean & Bacon Soup is a hearty and tasty dish that is great for cold days. When you mix different kinds of beans with bacon and fragrant vegetables, you get a filling and healthy meal.
Ingredients: 1 lb dried thirteen bean mix. 8 cups water. 1 onion, chopped. 3 cloves garlic, minced. 4 slices bacon, diced. 2 carrots, diced. 2 celery stalks, diced. 1 can 14.5 oz diced tomatoes. 1 tsp dried thyme. 1 tsp dried oregano. Salt and pepper to taste.
Instructions: Rinse the thirteen bean mix and let it soak in water overnight. Diced bacon should be cooked in a big pot until it gets crispy. Take the bacon out of the pot and set it aside. Leave the bacon grease in the pot. To the pot with bacon grease, add chopped onion and minced garlic. Saut until the meat is soft. Soak the beans and put them in a pot. Add 8 cups of water, diced carrots and celery, diced tomatoes with their juices, thyme, and oregano. Once the soup starts to boil, lower the heat and let it cook slowly for about an hour and a half to two hours, or until the beans are soft. Add pepper and salt to taste. Serve hot with crispy bacon bits on top.
