As per my last time using my englesaugen tray to make mini doughnuts, I finally used it to make englesaugen, 'angel eyes', a German thumbprint biscuit. To be honest, I gave the tray away to a friend who likes to bake, because I didn't like the results from using the tray. I'd rather use my hands to create the thumbprint myself and because the holes are too small, jam doesn't fill in much and it definitely lacks in a jammy centre. I found out that englesaugen aren't originally German, but a Swedish biscuit called hallongrotter 'raspberry cave'.
