SO I READ SHIN’S DEATH IN SUPER’S MANGA CHAPTER 16!!

Since Io works in the Time Nest along with Future Trunks, she would have seen Shin’s demise in Trunks’ timeline -- and know she can’t do anything to change it because THAT’S how time is supposed to be. 

Io deeply cares for the Supreme Kai, but knows that A) He wouldn’t have feelings back and B) It’s unprofessional. She trains in hopes that maybe she can be Shin’s apprentice and protect him if another threat arises.
