I’ve had this for a couple months (it was labeled delosperma lehmanii) I recently got a full spectrum light to help with the leaning/stretching but am not sure what to do about the wrinkly leaves. I know that can be a sign of being thirsty but in my reading it said this should only be watered at very specific times (not during winter) is there something I’m missing?

For these wrinkles means thirsty!! These are just about the thirstiest succulents there are and they're very dramatic about it as you can see. Watering in winter is not a problem, if they're wrinkling and asking for it then go for it. Generally winter watering just happens less frequently, it doesn't stop entirely unless you're talking about Lithops or Split rocks (and even then it isn't really tied to winter but their growth cycle instead).
So I think it's just asking for a drink and it'll be fine :)
