Here are this weeks healthy food ideas…..
Avocados, Dry roasted Pecans, Tofu, Stuffed Manicotti, and Baked Spaghetti.
*Snack Idea…..
Avocado
Avocado 1each
Look for a soft but not mushy avocado.
Cut in half.
Chow down!

Dry roasted Pecans
Dry roasted pecans 1each
Purchase dry roasted pecans with lite salt.
Chow Down!
*Lunch or Dinner Item…..
Tofu
Tofu 1each
Soy sauce 1tbsp (optional)
Ponzu (citrus soy sauce) 1tbsp (optional)
Tofu comes in different textures soft, medium, & firm.
Soft & medium is best to eat as is with soy sauce or ponzu.

Stuffed Manicotti
Manicotti shells 1pk
Meat sauce 3cups (post on 5/17/21)
Cottage cheese 2cups
Shredded Mozzarella 1 1/2cups
Shredded Provolone 1 1/2cups
Frozen Spinach 1/2cup
Bring 8cups of water to a boil, put manicotti, cook for 10 minutes. Cool.
Mix cottage cheese, 3/4cup or each cheese, spinach, & 1 cup sauce.
Use a baking pan or casserole dish.
Put 1/2 cup sauce in pan or dish.
Stuff manicotti with cheese mixture. Layer in pan or dish.
Put rest of sauce over stuffed manicotti. Sprinkle rest of cheese.
Bake in oven at 350 degreeF for 30 minutes.

Baked Spaghetti
Spaghetti Noodles 1/2box
Meat sauce 2cups
Shredded Cheese 1cup
Bring 8cups of water to a boil in pot.
Cook noodles for 20-25 minutes. Drain and cool.
Get a baking dish or casserole dish. Grease with cooking spray.
Put noodles in pan or dish. Mix sauce with noodles.
Sprinkle cheese. Bake at 350 degreeF for 30 minutes.
