Ingredients: 1 cup gluten-free all-purpose flour. 1/2 cup tapioca flour. 1/2 cup rice flour. 1/2 tsp salt. 2 tbsp olive oil. 1/2 cup cold water. 1 cup mixed vegetables e.g., carrots, peas, corn, bell peppers, finely chopped. 1/2 cup tofu, crumbled. 2 cloves garlic, minced. 1 tsp ginger, grated. 2 tbsp gluten-free soy sauce. 1 tbsp sesame oil. Salt and pepper to taste. Oil for frying.
Instructions: Put the tapioca flour, rice flour, gluten-free all-purpose flour, and salt in a bowl. Mix the dry ingredients together with the olive oil and cold water. Mix until the dough is smooth. Put a lid on top of the dough and wait 30 minutes. Break up the tofu and add it to a different bowl along with minced garlic, grated ginger, gluten-free soy sauce, sesame oil, salt, and pepper. This is what you'll put inside your dumplings. Break the dough into small pieces, and on a gluten-free surface that has been dusted with flour, roll each piece into a thin circle. Put some of the tofu and vegetable filling in the middle of each circle of dough. To make a half-moon shape, fold the dough over the filling and press the edges together with a fork to seal them. Put oil in a deep pan and heat it over medium-high heat. With care, add the dumplings to the hot oil and fry them for three to four minutes on each side, until they are golden brown and crispy. Take the dumplings out of the oil and let them drain on paper towels to get rid of the extra oil. Hot gluten-free vegetable dumplings should be served with your favorite dipping sauce.
