You can enjoy this tomato soup's rich and creamy texture without adding heavy cream. This soup is great for a cozy keto-friendly meal because it has a smooth mix of tomatoes, garlic, onions, and the slight nuttiness of almond milk.
Ingredients: 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 2 cans 28 ounces each whole peeled tomatoes. 1 cup vegetable broth. 1 cup unsweetened almond milk. 1/4 cup fresh basil leaves, chopped. Salt and pepper, to taste. Optional toppings: fresh basil leaves, grated Parmesan cheese, heavy cream.
Instructions: Set the olive oil in a big pot over medium-low heat. Put in the chopped onion and cook for about 5 minutes, until it gets soft. Add the minced garlic to the pot and cook for another one to two minutes, until the garlic smells good. Add the tomato juice from the can and the vegetable broth. Bring the mixture to a low boil, then stir it every now and then for 15 to 20 minutes. Carefully blend the soup until it's smooth with a regular blender or an immersion blender. Add the almond milk and chopped basil leaves to the soup after putting it back in the pot. To taste, add salt and pepper. Allow the flavors to blend for another 5 to 10 minutes by simmering the soup. If you want, you can serve it hot with grated Parmesan cheese, fresh basil leaves, or a drizzle of heavy cream on top.
