This flavorful side dish of stir-fried mushrooms and tomatoes is quick and simple to prepare and is Paleo-friendly. The aromatic garlic and oregano add a wonderful contrast to the earthy mushrooms and sweet cherry tomatoes. It's the ideal side dish for any Paleo dinner!
Ingredients: 2 cups mushrooms, sliced. 1 cup cherry tomatoes, halved. 2 cloves garlic, minced. 2 tablespoons coconut oil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Fresh parsley for garnish.
Instructions: In a skillet set over medium-high heat, warm the coconut oil. Saute the minced garlic for 30 seconds, or until it becomes fragrant. Sliced mushrooms should be added and cooked for five to six minutes, or until they begin to release moisture and brown. Add the dried oregano, black pepper, salt, and cherry tomatoes and stir. Simmer the tomatoes for a further three to four minutes, or until they are tender and have released their juices. Take off the heat and add some fresh parsley as a garnish. Warm up and enjoy as a tasty Paleo side dish!
