Vegan stew made with split pigeon pea lentils and ripe tomatoes is called Tomato Pappu. It is comforting and tastes great. This dish is full of protein, fiber, and important nutrients. You can eat it by itself or with rice or bread for a healthy meal.
Ingredients: 1 cup split pigeon pea lentils. 3 cups water. 2 tablespoons oil. 1 teaspoon mustard seeds. 1 teaspoon cumin seeds. 1 onion, chopped. 3 cloves garlic, minced. 1 inch ginger, grated. 2 tomatoes, chopped. 1 teaspoon turmeric powder. 1 teaspoon coriander powder. 1/2 teaspoon red chili powder. Salt to taste. Cilantro for garnish.
Instructions: Rinse the split pigeon pea lentils thoroughly and drain. In a pot, add the lentils and water. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20-25 minutes. In a separate pan, heat oil over medium heat. Add mustard seeds and cumin seeds. Once they start spluttering, add chopped onions and saut until golden brown. Add minced garlic and grated ginger, saut for another minute. Add chopped tomatoes and cook until they turn mushy. Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for a couple of minutes until the spices are well incorporated. Add the cooked lentils to the tomato mixture and simmer for another 5-10 minutes, allowing the flavors to meld together. Garnish with chopped cilantro before serving.
