South Indian 4 ingredient Watermelon Pancakes- free from top 8 allergens
Pancakes+watermelon is not what first comes to mind when thinking of the perfect food couple- but they’re actually rather wonderful! Who would’ve thought the fluffy brunch staple would match so beautifully with the sweet juices of a refreshing slice of watermelon? However, it is a common dish in South India. Made with gluten free rice flour, It’s usually eaten with grated coconut, green chilies, or basil/coriander leaves, but I brunched it up and had it with a healthy drizzle of Enjoy Life chocolate! Of course you can eat with with any of the former toppings, powdered sugar, maple syrup, or by itself. It’s SUPER easy too, just four ingredients thrown together. A great, refreshing dish to mark the end of summer.
3/4 cups rice flour
1 cup of watermelon pureé
pinch of salt
2 pinches cardamom- an aromatic spice native to South Asia- goes really well with watermelon!
Melted vegan margarine or oil for frying
Toppings as you like it
Serve hot!
