Ingredients: 1 lb ground beef. 1 packet taco seasoning. 1 cup diced tomatoes. 1 cup canned corn kernels, drained. 1 cup canned black beans, drained and rinsed. 1 cup shredded cheddar cheese. 1/2 cup diced red onion. 1/2 cup diced bell pepper. 1/2 cup diced cucumber. 1/4 cup sliced black olives. 4 cups lettuce, chopped. 1/4 cup sour cream. 1/4 cup salsa. 1/4 cup guacamole. 2 tbsp chopped fresh cilantro. Salt and pepper to taste. Cooking oil.
Instructions: In a skillet, heat a bit of cooking oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula as it cooks. Stir in the taco seasoning and cook for another 2-3 minutes. Remove from heat and set aside to cool. In a large bowl, combine the diced tomatoes, corn, black beans, cheddar cheese, red onion, bell pepper, cucumber, and black olives. Mix well. Divide the chopped lettuce evenly among meal prep containers. Top the lettuce with the cooked ground beef mixture. Add a dollop of sour cream, salsa, and guacamole to each container. Garnish with chopped fresh cilantro. Season with salt and pepper to taste. Seal the meal prep containers and refrigerate until ready to eat.
