Ingredients: 4 small corn tortillas. 1 cup cooked and shredded chicken. 1 cup refried beans. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/2 cup diced onions. 1/2 cup shredded cheese. 1/4 cup sour cream. 1/4 cup salsa. 2 tablespoons chopped cilantro. 1 lime, cut into wedges.
Instructions: Preheat your oven to 350F 175C. Place the corn tortillas on a baking sheet and bake for 5 minutes or until they become crispy. While the tortillas are baking, heat the refried beans in a microwave-safe bowl for 1-2 minutes until hot. Spread a layer of refried beans on each crispy tortilla. Top the beans with the shredded chicken, shredded lettuce, diced tomatoes, diced onions, and shredded cheese. Place the loaded tortillas back in the oven for 2-3 minutes until the cheese is melted.
