Ingredients: 2 onions, thinly sliced. 2 tablespoons olive oil. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 refrigerated pie crust. 3 eggs. 1 cup milk. 1 cup shredded cheese such as Gruyre or Swiss. 1/4 teaspoon nutmeg.
Instructions: Preheat oven to 375F 190C. In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes. Season with salt and black pepper. Line a tart pan with the pie crust, trimming any excess dough. In a mixing bowl, whisk together eggs, milk, shredded cheese, and nutmeg. Season with a pinch of salt. Spread caramelized onions evenly over the pie crust. Pour the egg mixture over the onions. Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown. Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
