I go hours and hours and hours without eating anything. Then I eat every goddam thing in a span of 10 minutes.
Any of my followers who cook I want your opinion on this if you will...
I decided on either a sacchietti or a tortelinni pasta.
Both of those pastas traditionally are made with a broth for the sauce, but I wanted to make it a little more interesting. So instead I'm doing a cream sauce (a very light one, mind you, because I don't want to stray too far from the traditional model).
The idea is to stuff them with apple and ricotta cheese. I want to make the sauce with a broth base and add basil, garlic, and finely chopped prosciutto, the cream being added last.
What do you guys think? Does anything here sound like it would be less than satisfactory? Any extra ideas?
