Ingredients: 4 tostada shells. 1 cup canned black beans, drained and rinsed. 1 cup tomatillo salsa. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped fresh cilantro. 1/2 cup crumbled queso fresco. 1/4 cup sour cream. 1 lime, cut into wedges. Salt and pepper to taste.
Instructions: Preheat your oven to 350F 175C. Place the tostada shells on a baking sheet and warm them in the oven for 5-7 minutes or until they are slightly crispy. In a small saucepan, heat the black beans over medium heat. Add a pinch of salt and pepper, and cook until they are heated through, about 3-4 minutes. To assemble the tostadas, spread a spoonful of tomatillo salsa onto each tostada shell. Top each tostada with a portion of the warmed black beans. Layer on shredded lettuce, diced tomatoes, diced red onion, and chopped cilantro. Sprinkle crumbled queso fresco on top of each tostada. Drizzle a dollop of sour cream over the tostadas.
