Orchestrating Meals and Melting Heads I walk into a restaurant and the planning starts immediately. I'm already taking in the pulse of the place as find my chair. I'm eavesdropping on every table I walk by. Once I get the menu and wine list I'm in overdrive. Scanning and conniving out the best possible cadence of consumption for the items I feel are the best to order based on what my gut is telling me. La #VitelloTonnato at #TrattoriaTrippa last night was so perfect it made me want to try and serve this dish again after so many failures. I don't know why it's so weird for people in the states to grasp #veal with a #tunasauce. I have tried numerous times to sell this dish with no luck at all. Who wants me to make it at my restaurants? It's an amazing combination of cold tender #roastedveal in a cured and cooked tuna, #capers, #garlic, #parsley and extra virgin #oliveoil dressing.
