These delightful triple berry tartlets combine the sweetness of raspberries, blueberries, and blackberries in a buttery, flaky crust. Perfect for a sweet treat or elegant dessert.
Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1/4 teaspoon salt. 6 tablespoons unsalted butter, cold and cut into small pieces. 1 large egg yolk. 2 tablespoons ice water. 1 cup mixed berries such as raspberries, blueberries, and blackberries. 1 tablespoon cornstarch. 1/4 cup granulated sugar. 1 teaspoon lemon zest. 1 tablespoon lemon juice. 1/4 teaspoon vanilla extract. Powdered sugar, for dusting.
Instructions: In a food processor, pulse together flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Add egg yolk and ice water, pulsing until dough comes together. Transfer dough to a lightly floured surface and knead briefly until smooth. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes. Preheat oven to 375F 190C. In a bowl, toss together mixed berries, cornstarch, sugar, lemon zest, lemon juice, and vanilla extract until combined. Divide chilled dough into 6 equal portions. Roll each portion into a 4-inch circle and transfer to tartlet pans. Divide berry mixture among the tartlet pans. Bake for 25-30 minutes, or until crust is golden brown and filling is bubbling. Let tartlets cool in pans for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
