Ingredients: 1.5 lbs chicken thighs, boneless and skinless. 1 onion, chopped. 3 cloves garlic, minced. 1 red bell pepper, sliced. 1 cup pineapple chunks. 1/4 cup Caribbean jerk seasoning. 1/4 cup chicken broth. 1 lime, juiced. Salt and pepper to taste. Tortillas, for serving. Toppings: shredded lettuce, diced tomatoes, sliced avocado, chopped cilantro, sour cream, lime wedges.
Instructions: Place chicken thighs in the slow cooker. Add chopped onion, minced garlic, sliced red bell pepper, and pineapple chunks on top of the chicken. In a small bowl, mix Caribbean jerk seasoning with chicken broth and lime juice. Pour over the chicken and vegetables. Season with salt and pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and cooked through. Once cooked, shred the chicken using two forks and mix well with the sauce and vegetables.
