A tasty tuna cake that is low in carbs and has a hint of coconut flavor. It's great for a quick and easy meal.

Ingredients: 2 cans tuna, drained. 1/2 cup coconut flour. 1/4 cup shredded coconut. 2 eggs. 1/4 cup mayonnaise. 1/4 cup chopped cilantro. 2 tablespoons lime juice. 1 teaspoon garlic powder. Salt and pepper to taste. Coconut oil for frying.

Instructions: In a mixing bowl, combine tuna, coconut flour, shredded coconut, eggs, mayonnaise, cilantro, lime juice, garlic powder, salt, and pepper. Mix until well combined. Form the mixture into patties. Heat coconut oil in a skillet over medium heat. Fry the patties until golden brown on each side, about 3-4 minutes per side. Remove from the skillet and drain on paper towels. Serve hot and enjoy!
