Ingredients: 2 cups shredded cooked turkey. 1 cup mixed vegetables carrots, peas, corn. 1 cup shredded mozzarella cheese. 1/2 cup diced onion. 1/4 cup diced celery. 1/4 cup diced mushrooms. 1/4 cup diced bell pepper. 1 teaspoon garlic powder. 1 teaspoon dried thyme. 1 teaspoon dried parsley. Salt and pepper to taste. 1 sheet puff pastry.
Instructions: Preheat oven to 400F 200C. In a large bowl, mix together shredded turkey, mixed vegetables, mozzarella cheese, diced onion, diced celery, diced mushrooms, diced bell pepper, garlic powder, dried thyme, dried parsley, salt, and pepper. Roll out puff pastry sheet on a lightly floured surface. Spread turkey and vegetable mixture evenly over the puff pastry, leaving a border around the edges. Roll up the puff pastry tightly, sealing the edges. Place seam side down on a baking sheet lined with parchment paper. Brush the top with melted butter and sprinkle with additional herbs if desired. Bake for 25-30 minutes or until golden brown and cooked through. Slice and serve hot.
