Ingredients: 1 medium head cauliflower, cut into florets. 2 eggs. 1/4 cup almond flour. 1/2 teaspoon garlic powder. 1/2 teaspoon cumin. 1/4 teaspoon sea salt. 1 pound ground beef or turkey. 1 tablespoon olive oil. 1 small onion, diced. 1 bell pepper, diced. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper optional. Salt and pepper to taste. Toppings: avocado slices, salsa, shredded lettuce, chopped tomatoes, cilantro, lime wedges.
Instructions: Set oven temperature to 375F 190C. Use parchment paper to line a baking sheet. In a food processor, pulse cauliflower florets until they resemble rice. Squeeze out extra moisture from the cauliflower rice by transferring it to a fresh kitchen towel. In a large bowl, mix together cauliflower rice, eggs, almond flour, garlic powder, cumin, and sea salt until well combined. Form each of the eight portions of the mixture into a small tortilla and place it on the baking sheet that has been preheated. Bake the tortillas for 10 to 12 minutes, or until they are set and the edges are browned. Let cool slightly. Meanwhile, place a skillet over medium heat with olive oil. Add diced onion and bell pepper, saut until softened, about 5 minutes. Using a spoon, break up the ground turkey or beef and add it to the skillet. Cook until browned and cooked through, about 8 minutes. Add the paprika, chili powder, salt, pepper, and cayenne if using. After two more minutes of cooking, turn off the heat. Spoon the meat mixture onto each cauliflower tortilla to assemble the tacos. Add shredded lettuce, chopped tomatoes, chopped cilantro, avocado slices, salsa, and a squeeze of lime juice on top. Enjoy and serve right away!

Instructions: Over medium-low heat, cook the ground turkey in a skillet until it turns brown and is fully cooked. Use a spoon to break it up as it cooks. Get rid of any extra fat. To season the turkey, add the taco seasoning and then do what it says on the package. Most of the time, you'll need to add water and let it cook for a few minutes. Put away. Lay out the chopped iceberg lettuce in a large salad bowl. Black beans, corn, cheddar cheese, sour cream, black olives, red onion, and cilantro should be put on top of the lettuce. Spread the seasoned ground turkey on top of the salad. Put the diced avocado in a small bowl. Add the lime juice and salt and pepper to taste. Place the avocado on top of the salad.
