Ingredients: 1 lb large shrimp, peeled and deveined. 2 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. 1/2 tsp garlic powder. 1/4 tsp cayenne pepper adjust to taste. Salt and pepper to taste. 2 tbsp olive oil. 8 small corn or flour tortillas. 2 cups shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 cup shredded cheddar cheese. Lime wedges for serving.
Instructions: Put garlic powder, cayenne pepper, chili powder, cumin, paprika, salt, and pepper in a bowl. Mix the spices together and coat the shrimp well. Put olive oil in a pan and heat it over medium-high heat. After you add the shrimp, cook them for two to three minutes on each side, or until they turn pink and opaque. Take it off the heat. Make the Southwest Avocado Sauce in a different bowl recipe below. Follow the directions on the package to warm the tortillas. Put a small amount of shredded lettuce on each tortilla. Then add shrimp, diced tomatoes, diced red onion, cilantro, and shredded cheddar cheese. Add Southwest Avocado Sauce to the toppings, and then use lime wedges to decorate. Serve right away and enjoy!
