When he notices that Papyrus struggles to catch a human and starts to doubt himself (thanks to Flowey), Sans decides to make Papyrus happy and uses Gaster's experiment from the past to turn into a human.
Hilarity ensues."
(Btw, the transformation doesn't happen until chapter three, you can enjoy skeletal Sans for a fairly long time. Oh, and the characters act close to canon. I did a LOT of research for this.)
