Patience and softness. Varian tends to get volatile when he's in a tough spot, so a gentle touch is what works best. It's also pretty much the only thing he responds to, everything else just makes him angrier.

I mean, he's pretty courageous enough, given everything. He's the High King of the Alliance, so protecting his people comes first and foremost.
