A hearty and nutritious Mushroom Lentil Stew with Spinach Umami Girl, packed with flavors and wholesome ingredients.
Ingredients: 1 cup lentils. 8 oz mushrooms, sliced. 4 cups spinach, chopped. 1 onion, diced. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 6 cups vegetable broth. 2 tablespoons soy sauce. 1 teaspoon dried thyme. 1 teaspoon smoked paprika. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until fragrant. Add sliced mushrooms and cook until they release their moisture. Stir in lentils, diced tomatoes, vegetable broth, soy sauce, thyme, and smoked paprika. Bring the stew to a boil, then reduce heat and simmer until lentils are tender about 25-30 minutes.
