These dumplings are a tasty and unique snack or meal, whether you steam them or fry them in a pan.
Ingredients: 1 cup cooked quinoa. 1 cup black beans, drained and rinsed. 1 cup corn kernels. 1/2 cup diced bell peppers assorted colors. 1/2 cup diced red onion. 1/2 cup diced tomatoes. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1 cup shredded cheddar cheese optional. 1 package dumpling wrappers. Water for sealing dumplings. Oil for frying optional.
Instructions: In a large mixing bowl, combine the cooked quinoa, black beans, corn kernels, diced bell peppers, diced red onion, diced tomatoes, minced garlic, ground cumin, and chili powder. Mix well to incorporate all the ingredients. Season the mixture with salt and pepper to taste. You can also add shredded cheddar cheese if desired for extra flavor. Take a dumpling wrapper and place a spoonful of the quinoa veggie burrito mixture in the center of the wrapper. Dip your finger in water and moisten the edges of the dumpling wrapper. Fold the wrapper in half to create a half-moon shape and press the edges together to seal the dumpling. You can use a fork to crimp the edges for a decorative touch.
