Ingredients: 200g almond flour. 200g powdered sugar. 3 large egg whites. 1/4 tsp turmeric powder. 75g granulated sugar. 50g Roquefort cheese, crumbled. 1 ripe pear, diced. Yellow food coloring optional. Powdered sugar for dusting.
Instructions: Prepare a baking sheet with parchment paper and preheat your oven to 300F 150C. Sift together the almond flour, powdered sugar, and turmeric powder into a mixing bowl. In a separate bowl, whisk the egg whites until foamy. Gradually add the granulated sugar while continuing to whisk until stiff peaks form. Gently fold the dry almond mixture into the egg whites until you get a smooth, shiny batter. Add a few drops of yellow food coloring if desired. Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto the parchment paper, leaving space between them. Tap the baking sheet on the counter to remove air bubbles and let the macarons sit at room temperature for about 20-30 minutes until they develop a slight crust. Bake the macarons in the preheated oven for 12-15 minutes until they have risen and have firm shells. Remove the macarons from the oven and let them cool completely on the baking sheet. Once cooled, spread a small amount of Roquefort cheese on the flat side of half the macaron shells and top with diced pear. Sandwich with the remaining macaron shells.
