One of the funny things my Mom used to say when giving one of us grown kids food to take home (and she wasn't trying to be funny) was "Here, have this but eat it today." By which she meant it was on the cusp of going bad. Today I had some vegetables in the same predicament due to over zealous tapping on instacart. I had to use them before it was too late. One big sweet potato was teetering on the edge. So this is what I made: zucchini, chick peas and coconut in pineapple juice and a hit of allspice; zucchini, parmesan cheese, tomatoes and olives; broccoli, cabbage and sweet potato (yes, that one, it made it) in OJ, balsamic vinegar and a sprinkling of orange zest.
