Ingredients: 2 cups whole milk. 1/2 cup granulated sugar. 1/4 cup cornstarch. 1/4 teaspoon salt. 4 large egg yolks. 2 tablespoons unsalted butter. 2 teaspoons pure vanilla extract. 1 cup heavy cream. 1/4 cup powdered sugar. 1 teaspoon vanilla extract. 1 cup granola. 1 cup fresh berries strawberries, blueberries, raspberries.
Instructions: Sugar, cornstarch, and salt should all be mixed together in a medium-sized saucepan. Whisk the egg yolks and milk together in a different bowl. Add the egg mixture slowly to the saucepan while whisking all the time to keep the mixture from clumping. Stir the mixture all the time over medium-low heat until it gets thick and starts to boil. Take it off the heat. It will be smooth after you add the butter and vanilla extract. Let the pudding cool down a bit. Mix the powdered sugar, vanilla extract, and heavy cream in a different bowl. Whip them together until stiff peaks form. In bowls or glasses, layer the vanilla pudding, granola, whipped cream, and fresh berries to make the parfaits. Cover it again with more layers. Top it off with whipped cream and berries. Put the parfaits in the fridge for at least two hours before you serve them. Have fun with your Best Vanilla Pudding Parfait!
